Central Vermont Meats, our associated retail shop, welcomes you from Tuesday through Friday, noon to 6 PM, on Saturdays from 9 AM to 6 PM, and on Sundays from 10 AM to 3 PM. For any special orders or inquiries, we encourage you to give us a call. Please note that our processing availability for beef, pork, lamb, and goat is particularly high in demand during the fall season, so we strongly advise booking your slot early.
As a licensed custom processor, we adhere to the highest standards of quality and safety. We also offer USDA inspection, which allows the meat we process for you to be sold to retailers across the country, providing an excellent opportunity for those looking to market their products. Following the conclusion of the regular hunting season, our focus shifts to crafting exceptional wild game products. After January 1st, we invite you to bring your harvested meat to us for specialized further processing into delicious items such as snack sticks, summer sausage, savory bacon, and a variety of other cooked delicacies. Comprehensive Livestock Processing
We are fully equipped and ready to accept your beef, pork, lamb, and goat for meticulous custom processing. It is important to note that all custom processed meat is clearly labeled “not for sale” in compliance with regulations. Whether you bring us carcasses or bulk meat, we are prepared to handle your further processing requirements with precision. Furthermore, we provide our customers with the valuable option of USDA inspection for their livestock products, ensuring they meet rigorous federal standards.
Expert Wild Game Handling and Processing
Our expertise extends to the careful processing of a wide range of wild game, including deer, moose, bear, and other species. We accept animals whether the hide is on or off, though we always recommend bringing your kill to our facility as promptly as possible to ensure optimal quality. Please be aware that during the busy rifle deer season, our capacity can fill up rapidly, so early communication is beneficial.
For hunters wishing to preserve a trophy, we offer professional caping services for a modest fee. If you allow us to keep the hide, there is no charge for the skinning service. We also return antlers, prepared as a skull cap suitable for a plaque mount, at no additional cost.
Our commitment to quality is evident in our processing techniques. All cuts are performed boneless, and we meticulously avoid the use of band saws, which can compromise meat quality. Instead, every piece of meat is carefully hand-trimmed and cut precisely to your specifications. Burger meat is ground twice to achieve a consistently fine texture. We also craft a diverse array of fresh sausage flavors, each hand-mixed and ground twice before being packaged in your choice of bulk packages or natural casing links. All other cuts are expertly hand-trimmed, wrapped first in high-quality wax paper, and then in durable freezer paper, or alternatively, vacuum-sealed for maximum freshness.
